Cilantro, Honey, and Lime Grilled Corn
I use a lot of cilantro, honey, and lime because they are one of my favorite flavor combos, creating the perfect sweet, tart, and savory bite. I also tend to reach for honey and maple syrup often, especially when I’ve fired up the grill and am prepping to cook some veggies. I just love the caramelization these ingredients create when thrown on the hot grate. Honey pairs well with corn because it brings out its natural sweetness, but if you’re not into that specific flavor profile, feel free to skip the honey in this recipe to keep it a little more on the savory side.
How to Make It
Preheat the grill to medium-high heat. If the corn has husks, peel them back and remove the silk.
Place the corn on the grill, turning it occasionally, until the kernels are charred and cooked through, 10 to 12 minutes.
While the corn is grilling, in a small bowl, combine the cilantro, honey, lime zest, lime juice, and sunflower seed oil, and mix well.
During the last few minutes of grilling, brush the corn with the cilantro, honey, and lime mixture, turning the corn to coat all sides evenly. Reserve any extra mixture.
Remove the corn from the grill, and place it on a serving platter. Drizzle any remaining cilantro, honey, and lime mixture over the corn, season with salt and pepper to taste, and serve with lime wedges on the side for an extra burst of citrus flavor.
