Hell’s Backbone Grill & Farm

Hell’s Backbone Grill & Farm, six-time James Beard semifinalist and nominee, opened for its much-anticipated 24th season on March 31, 2023. This world-class restaurant is situated on the grounds of the Boulder Mountain Lodge, in the heart of the magnificent Grand Staircase-Escalante National Monument. Co-owners Jen Castle and Blake Spalding came together over two decades ago, to open an ethical, locally sourced destination restaurant with community and sustainability serving as core values. Since, thousands have traveled every season for the fresh, seasonal cuisine sourced and harvested from heirloom orchards, local ranches, and, primarily, from the restaurant’s very own six-acre organic farm.
