Pop Up Bagels and schmear

Californians can finally indulge in the beloved rip-and-dip bagels with schmear from PopUp Bagels. The beloved Connecticut bagel joint opened its doors in Brentwood in December 2025, introducing their iconic selection of bagels and extensive collection of schmears with its second West Coast location.

The first shop out West opened in La Jolla in November 2025, and the chain plans to expand with 30 more locations locations popping up across Southern California. Just like back East, Angelenos can top their bagels traditional schmears, including plain cream cheese, scallion cream cheese, and salted butter. Or opt for one of their seasonal schmears, which rotate weekly on Thursdays. This week, try lemon pepper cream cheese or dessert bowl butter. The lemon pepper flavor was invented in partnership with Wingstop, while their dessert bowl butter is a collaboration with influencer Brett Chody

What started as a backyard pick-up window right out of founder Adam Goldberg’s Connecticut home turned into a viral craze all over the East Coast. Now officially welcomed to the West, PopUp was originally a pandemic-driven hobby that took Connecticut by storm. Despite their expansion, PopUp still prioritizes quality and continuity across each and every location.

You can order in-store or pre-order to avoid a long line, and there are five bagels to choose from: plain, everything, poppy seed, salt, or sesame bagels. Pre-order is available while supplies last, but be warned—the smallest order you can make online is a dozen bagels with two schmears, while the smallest order you can make in person is three bagels with one schmear. Our advice? Bring your friends or come hungry!
