Pasque, located within Denver’s eco-conscious Populus hotel, offers a nature-inspired dining experience that honors Colorado’s seasonal bounty. The name “Pasque,” derived from an early-blooming wildflower native to Colorado, reflects the restaurant’s deep connection to the land. Led by Executive Chef Ian Wortham, the menu celebrates locally sourced ingredients in both plant-based and protein-driven dishes. Guests can engage with the culinary process through the open kitchen, watching each dish come to life. The design also incorporates biophilic principles, with flowing lines, organic shapes, and a warm color palette of rich woods and natural stone, while expansive Aspen-eye shaped windows offer stunning views of the Denver skyline, bringing the outdoors inside. With a commitment to sustainability, Pasque emphasizes zero-waste dining, responsible sourcing, and eco-friendly practices, offering a dining experience rooted in both flavor and environmental stewardship.
