Creamy Avocado Caper Dressing

How to Make It

In a food processor, whirl extra-virgin olive oil, lemon juice, avocado, water, capers, and kosher salt and pepper. Taste; add more salt if you like.

2/3 cup extra-virgin olive oil
Juice of 1 Meyer lemon or regular lemon
1/2 avocado
1/2 cup water
2 teaspoons drained capers
1/2 teaspoon each kosher salt and pepper
