Dusk

Dusk is a craft cocktail bar tucked inside the 45-key Drift Santa Barbara, but it is much more than a hotel lobby bar. Specializing in agave spirits, Dusk’s indoor-outdoor space is moody and minimalist, with concrete walls, woven pendant lights, and an always-open garage-style entry. Inside, a collection of 130+ tequilas and mezcals anchors a program that explores Mexican spirits in further depth than most bars, with rare bottles of bacanora, sotol, and raicilla gracing the menu. The food is designed to complement the beverage program, featuring Baja oysters, bright ceviche, and house-made vegetarian snacks like guacamole and salsa. Rotating seasonal cocktail menus, education-based programming, and annual pop-ups like the Tarantino-inspired From Dusk till Dawn, timed to Halloween, keep Dusk interesting.
