Anthology

Set along Willamette Valley’s Dundee Hills estate sits Anthology, a 14-seat open kitchen concept that overlooks surrounding vines, forest and farmland. Anthology is led by James Beard nominated Chef Chase Williams and Chef Zack Ehrlich who lead each evening’s dinner preparing each course in front of the guest from seasonal, hand-drawn ‘volumes’ of menus and curated wine pairings. It’s the centerpiece to the Dundee Hills experience, bringing together the working agricultural estate with the creativity from the kitchen through an intimate tasting menu. The chefs are culinary stewards, blending refined technique with a deep respect for Oregon’s agricultural landscape. Menu volumes evolve with the season’s harvest—drawing produce grown from Chef’s Garden, honey from the estate hives, proteins from nearby farms, and wines from the estate’s vineyards.
