When it comes time to harvest loose-leaf lettuce or any type of leafy green like kale, romaine, or arugula, you have two techniques to choose from. The first technique is to harvest the larger outer leaves and let the center leaves continue to grow. This is great if you need a smaller harvest. The second technique is called “cut and come again,” and it yields a much larger harvest. Snip the entire plant with sharp pruners or kitchen shears so only an inch or two remains connected to the soil. The whole plant will regrow and be ready to be harvested again in two to three weeks.
