“Better Than Expected” Pineapple Margarita
This full-flavored yet refreshing margarita served at Grand Solmar Land’s End in Cabo San Lucas, Mexico, comes from bartender Fernando Manuel Herrera Muñoz, otherwise known as Manny. The fresh mint lifts the drink while the muddled serrano gives it a spicy kick.
How to Make It
Combine pineapple, cucumber, serrano, juices, and mint in a mixing glass or shaker and muddle ingredients until combined.
Add simple syrup, fill shaker with ice, and shake until combined.
Add tequila, stir, strain into a cocktail glass, and serve. Garnish with cucumber slice, mint leaf, and pepper slice if desired.
