We’ve reached the end of the year, so let’s go out with a bang in terms of cooking the coziest, heartiest, most celebratory foods this month. We’ve compiled a list of some of our favorite dishes to make in December to get you started.

The temperature has finally dropped in most parts of the West, which makes right now the perfect opportunity to go all in on stews, soups, and other warm comfort foods. They’re great to make in big batches and reheat during busy weeknights—with year-end projects and other responsibilities looming, meal-prepping will make things a lot easier.

You’ll want to take advantage of all the wonderful produce that’s in season, too. Enjoy winter citrus by serving Chicory Salad with Winter Citrus, Avocado, and Fennel Vinaigrette and Citrus Salad with Spiced Vanilla Syrup. It’s time to shine for root vegetables, so how about making a Roasted Carrot Platter or Winter Beet Soup. It’s also that time of year where many can’t get enough of winter squash, so make Sumac Hummus with Kale Ribbons and Roasted Delicata Squash and Lentil Stew with Winter Vegetables
