First, make the cookie bars. Whisk together flour, almond flour, coconut flakes baking powder, baking soda, and salt in a large mixing bowl. Use a mixer and beater to stir sugar, butter, and brown sugar: cream until fluffy. Add raw egg to the mixture then beat once more. Then toss in lime zest and the juice of a lime, adding citrus flavor to taste. Pour in vanilla extract and beat.
The dry flour combination should be added into the mixer in three rounds for optimal mixing, letting the ingredients incorporate slowly. While beating, line a baking dish with parchment, preparing to heat. When there are no visible clumps, guide the mixture into the dish, fattening across the width evenly from corner to corner.
