Recipes and Wine Pairings for the 2023 Travel Issue
2021 Wade Cellars Three By Wade, California: The high acidity in the wine cuts through the richness of Mussels with Fennel Cream from Portland’s Pacific Standard bar, adding a burst of citrusy flavor. There is a slight oyster-shell brininess in the wine that makes this ideal for seafood.
2021 Loomis Grenache Blanc Snow Estate, Napa Valley: This light and bright Grenache Blanc brings forth the fresh herbs and spices in Pacific Standard’s Shrimp Rolls while its medium body stands up to the richness of the recipe’s brioche and shrimp.
2019 Clay Shannon Petite Sirah, Lake County: The savory nature of the Escarole Galette with Black Olives and Pine Nuts meets its match with the inky, earthy Petite Sirah. And the briney black olive flavor is forefront in both the food and wine.
2019 Revelry Vintners Cabernet Sauvignon, Columbia Valley: The plum flavors in the wine accentuate the fruit in the Chicories with Dates, Parmesan, and Walnut Vinaigrette while the tannins cut the richness of the parmesan in the dish.
2020 Cloudview, Contra Costa: The added bitterness of the grilled chicory in Grilled Treviso with Pancetta Vinaigrette contrasts the ripe, sweet fruit of the wine. The juicy wine refreshes the palate after each salty punch of the pancetta called for in this recipe.
2020 Avennia Lydian GSM, Columbia Valley Washington: A dish like the Chicory Salad with Anchovy Vinaigrette and Torn Croutons needs a wine to meet its intensity. The bright peppery nature of the wine brings out more flavor in the dish.
