It’s tried and true advice: Take advantage of vegetables while they’re in season. The flavor will be richer, the feeling fresher. Now is the time for zucchini. You’d be surprised as to how versatile an ingredient it can be and how many dishes can very easily and deliciously incorporate it. Follow our recipes to feature this as the main event or sneak it into a sweet dessert to get your kids their vegetables in a tasty way.

For the past few years now, zoodles (swapping normal noodles for zucchini spirals) have become super popular in home kitchens. And yes, zoodles are delicious especially when prepared and seasoned correctly, but zucchini can go much further and can take on several creative forms. 

In the following recipes, zucchini improves soups, breads, salads, pasta dishes and cookies. It can blend into almost any dish. Its flavor is versatile and spans from sweet to savory and does so flawlessly. It pairs well with herbs such as garlic, basil, oregano, parsley, thyme, and ginger; alongside produce that includes tomatoes, mushrooms, sweet bell peppers, corn, and eggplant. Being a late spring and summery vegetable, it naturally pairs well with the other seasonal veggies.
