Located within Hotel 1000 in downtown Seattle, Rosebay is a refined bar offering craft cocktails, local beer and wine, and small plates in a cozy, alluring environment that captures the beauty of the Pacific Northwest and Washington’s state flower, the Pacific Rhododendron. Menus are centered on local, sustainable ingredients. Cocktails are infused with elements of fire, smoke and pine, drawing inspiration from the surrounding environment, and made with small batch and craft spirits.
