Botanist

Botanist, which boasts a restaurant, cocktail bar, and garden, is inspired by the principles of botany, transporting guests into a world where day blurs into night and food and drink are plenty. The menu depicts the culinary abundance of the Pacific Northwest with local produce, sustainably sourced seafood, and organic agricultural methods from backyard suppliers. Under the direction of Executive Chef Hector Laguna and Creative Beverage Director Grant Sceney, Botanist was named to the 50 Best Discovery list by the World’s 50 Best Restaurants and listed at No. 19 on the 2023 list of North America’s 50 Best Bars. In the same year, the bar was the recipient of the Michter’s Art of Hospitality Award, awarded by the North America’s 50 Best Bars Academy.
