Turkey and Grape Waldorf Salad





Yields
Makes 4 servings

 1/2 cup reduced-fat or regular mayonnaise
 2 tablespoons white wine vinegar
 1 tablespoon sugar
 1 teaspoon dried tarragon
 1/2 teaspoon dried thyme
 4 cups bite-size pieces skinned cooked turkey
 1 cup thinly sliced celery
 1 1/2 cups seedless grapes (red or green), rinsed
 1 crisp, tart apple such as Fuji or Granny Smith (1/2 lb.), rinsed
  Salt and pepper
 4 or 8 butter lettuce leaves (at least 5 in. wide), rinsed and crisped
 1/4 cup roasted salted almonds, coarsely chopped

In a large bowl, mix mayonnaise, vinegar, sugar, tarragon, and thyme. Add turkey and celery. Cut grapes in half. Core apple and cut into 1/2-inch chunks. Add grapes and apple to bowl. Mix gently to coat with dressing, adding salt and pepper to taste.

Lay lettuce on plates and mound salad equally onto leaves. Sprinkle with chopped almonds.
