Refreshing with fruit and layers of botanicals, this low-alcohol cocktail from Gillian Helquist of Healdsburg Shed in Northern California features a local wine-based apéritif called Jardesca added to the basic shrub.

 2 tablespoons Quince Shrub (or store-bought)
 1/4 cup chilled Jardesca* (wine-based aperitif) or 3 tbsp. Lillet Blanc
  About 1/4 cup chilled sparkling water
  Fresh bay leaf, optional

Pour 2 tbsp. shrub into an 8-oz. glass filled with ice. Top with Jardesca and 1/4 cup sparkling water and stir. Add more sparkling water if you like. Tuck in a bay leaf.
