Give the standard pumpkin cookie recipe an oh-so-Halloween twist this year with this ingenious recipe courtesy of The Jam Lab. For an adorable and delicious Halloween treat, bake your own madeleine cookies…and then decorate them as ghosts.
Start by adding raw eggs and sugar into a mixing bowl. Beat until frothy. Next, add pumpkin, orange zest, and vanilla extract, beating until incorporated. In a separate dry mixing bowl, add flour, baking powder, ground cloves, salt, nutmeg, and cinnamon, whisking the ingredients together. Fold the dry mixture into the wet mixture slowly, letting the two combine. Add melted butter, then let chill.
Brush pan shells with butter then add the mixture. Bake in the oven. Once the madeleines have cooled, it’s time to give them a ghostly appearance! Create a ghost-like exterior by dipping half of the madeleine into melted white chocolate and adding candy eyes. Next, use black icing to animate the cookies, drawing smiles, frowns, or aghast-looking facial expressions, creating a host of mini-cakes almost too cute to eat.
